Creamiest Mac and Cheese

2 cups elbow macaroni (8 ounces)
3 tablespoons butter
2 large eggs
3/4 heavy cream or evaporated milk
1 teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon mustard powder
Pinch cayenne pepper (optional)
1 1/2 cups shredded Cheddar cheese (6 ounces)
8 slices American cheese

Directions
1. In a large pot of boiling salted water, cook the macaroni according to the package directions. Drain well and return the pasta to the pot. Add the butter and stir over medium heat until the butter has melted and the pasta is coated.

2. In a medium bowl, whisk together the eggs, cream, salt, black pepper, mustard powder, and cayenne pepper, if using. Pour the egg and cream mixture into the pot and stir. Add the cheeses and continue stirring over medium heat until the sauce has thickened and is very creamy, about 3 minutes. Serve hot.

Serves 4 to 6

Take Away Tip
Dairy products are delicate creatures when they come across heat. There’s always the risk of curdling, which makes a clumpy mess. The best protection against curdling, folks, is fat. So, regular milk, with its lower fat content, will just not cut it in this recipe. Stick with the heavy cream or evaporated milk, and this mac will be at its creamy best!

Grandma Y’s Date Bars

Sugar, White, Granulated, 1 Cup
Eggs, Beaten, 3 Large
Salt, pinch
Water, 3 Tbls
Vanilla, 1 Tsp
Walnuts, Chopped, 1 Cup
Dates, Chopped, 1 Cup
Flour, 1 Cup
Baking Powder, 1/2 Tsp

Combine ingredients in order as listed above. Spread in thin layer in a 9 x 9 pan. Bake at 350 degrees for 25 minutes or until done.

Magic Cookie Bars

Butter, Melted, 1/2 Cup
Graham Cracker Crumbs, 1 1/2 Cups
Condensed Milk, Sweetened, 1 Can
Chocolate Chips, 1 Pkg
Coconut, 1/3 Cup
Nuts, Chopped, 1 Cup

In 13 x 9 pan spread melted butter evenly. Sprinkle graham cracker crumbs over the melted butter. Pour sweetened condensed milk evenly over graham cracker crumbs. Top with chocolate chips, coconut, and nuts. Press down gently. Bake at 350 degrees for 25 minutes or until brown. Cool and cut into 3 x 1.5″ bars.

Grandma Y’s Ice Box Cookies

Shortening, 1 Cup
Sugar, Brown, 2 Cups
Eggs, 2 Large
Flour, 3 1/2 Cups
Salt, Pinch
Baking Soda, 1 Tsp
Nuts (Optional) 3/4 Cup

Mix ingredients and place teaspoon sized balls of dough on cookie sheet. Bake at 300 for 10-15 minutes.

Grandma Y’s Dream Bars

Bottom Layer

Butter, 1/2 Cup
Salt, 1/2 Tsp
Sugar, Brown, 1/2 Cup
Flour, Sifted, 1 Cup

Cream butter, sugar, salt. Slowly incorporate the flour. Pour into 9 x 12 pan. Bake at 350 degrees from 15 minutes.

Top Layer

Sugar, Brown, 1 Cup
Vanilla, 1 Tsp
Eggs, 2, Well beaten
Baking Powder, 1/2 Tsp
Flour, 2 Tbls
Salt, 1/8 Tsp
Coconut, 1 1/2 Cups
Nuts, Chopped, 1 Cup

Combine all top layer ingredients. Spread over the bottom layer. Bake for an additional 15 – 20 minutes. Remove from oven and cut while still warm.

Grandma Y’s Orange Cake

Butter, 1 Cup
Sugar, White, Granulated, 1 Cup
Baking Soda, 1 Tsp
Milk, Sour, 1 Cup
Flour, Sifted, 2 1/2 Cups
Baking Powder, 1 Tsp
Salt, Pinch
Dates, Chopped, 1 Cup
Walnuts, Chopped, 1 Cup
Orange Zest, 2 Oranges
Cinnamon
Eggs, 2 Large, Beaten
Vanilla, 1 Tsp

Orange Juice, fresh squeezed from 2 oranges
Sugar, White, Granulated, 1/2 Cup, Divided

Cream butter & sugar. Mix baking soda & milk. Add to creamed butter / sugar mixture. Sift baking powder into flour. Add salt, dates, orange zest and walnuts to flour mixture. Mix in beaten eggs, cinnamon, and vanilla. Grease Tube pan and bake at 350 for 1 hour or more if necessary. While cake is baking, mix juice of two oranges and 1/2 of the sugar making sure its well blended and not ‘sugary’. Stir mixture occassionally until needed. 10 minutes after cake is out of the oven, pour juice mixture over cake and let stand in pan until coated. Cool completely and remove from pan.

Grandma Y’s Two Hour Bread

Yeast, 3 Pkgs
Water, Warm, 2 Cups
Eggs, 2
Sugar, White, Granulated, 1 1/2 Cups
Cinnamon Mix the above together with beater till foamy
Margarine, Melted, 3 Tbls
Salt, 1 1/2 Tsp
Flour, White, All-Purpose, 7 Cups

Mix well, let rise in same bowl until double. Punch down and make into 3 loaves. Let
rise until double. Bake at 350 degrees for 15-20 minutes.

Marilyn Y’s Cream Casserole

Noodles, 1 Cup
Creamed Corn, 1 Can
Cream of Chicken or Cream of Mushroom Soup, 1 Can
Hamburger, Cooked, Drained, 1 1/2 Lbs
Flour, White, All-Purpose, To taste
Cheese, Shredded Any flavor

Mix ingredients together and put in casserole dish. Sprinkle with shredded cheese.
Bake at 350 degrees until cheese is melted and browned.

Grandma Y’s Jello Mold

Cranberry Sauce, 1 Can
Cherry Jello, 2 Pkgs
Sour Cream, 1 1/2 Cups

Make Jell-O, add the cranberry sauce until melted. Mix together and put in mold. Let set
partially and beat in sour cream. Put back in mold and refrigerate.

Grandma Y’s Banana Bread

Shortening, 1/2 Cup
Butter, 1/2 Cup
Buttermilk, 6 Tbls
Salt, 1/4 Tsp
Baking Powder, 1 Tsp
Baking Soda, 1 Tsp
Flour, White, All-Purpose, 4 Cups
Nuts, Chopped, 1/2 Cup

Preheat the oven to 350 degrees. Mix all ingredients together. Bake for 1 hour.
